Sunday night is burger night

(Note: I meant to post this on Sunday evening but totally forgot about it until now)
Every so often I get the desire to create something tasty in the kitchen and as I’ve got free reign tonight I thought I’d make some beef burgers.
Ingredients
• 1lb Lean Beef Mince
• 2 small onions
• 3 cloves garlic
• 2 tsp fresh red chilli (seeds in)
• 1 tsp anchovy from a jar
• 1/2 tsp Worcestershire Sauce
• 1tsp muscovado sugar
• Block of mature cheddar cheese
• Salt and Pepper to season
• 4 burger buns
Prep
Coarsely chop one of the onions, the garlic, chilli and stick it in a food processor with the anchovy, Worcestershire sauce and the seasoning.
Blitz it for a it until you’ve got a finely chopped mixture.
Add the mince to the mixer and zizz it again until you have a lovely patty base.
Split the mix into 4 portions and shape into burgers.
Place on a plate, cover and chill ina fridge until needed.
Cooking
Preheat the grill on high and heat a frying pan with a couple of tsps olive oil.
Start to fry the onions with the sugar. Leave them to cook until you have a lovely rich onion jam.
Grill the burgers for 5 minutes each side or until well done.
Pile some cheese on each burger and melt under the grill.
Quickly toast the buns and assemble the burgers with a splodge of jam on top of each one.
Service
Serve with potato wedges, salsa, a green salad and a cheeky bottle o red wine
Notes
The food processor really makes things easier but you can smoosh stuff together by hand, just make sure everything is finely chopped before you mix.
The anchovy may seem a bit weird to some people but it really lifts the flavour into a whole new dimension of yummy.
You could also add a rasher of crispy bacon, swap the cheese for stinky blue and even chuck avocado on top of them.
